First, line out all your “necessaires”, prep and measure out ingredients, get a big skillet. Take a double swig of a reliable Cremant de Bourgogne and wipe your mouth with the back of your hand. This should amuse you; it did me 😀
In no time at all you’ll be at the table, looking out of the windows, watching the snow fall.
Easy Kielbasa and Cabbage Skillet
2 tbsp white wine vinegar
1 1/2 tbsp Dijon mustard
1 tsp paprika
A pinch of crushed red pepper
1 tsp salt
1/2 tsp black pepper
1/4 cup water
2 tbsp olive oil
2 tbsp butter
1 small onion, chopped
3-4 garlic cloves, slivered
1/2 red bell pepper, diced
1 lb smoked kielbasa, sliced
1 small cabbage, cored and coarsely chopped
In a small bowl, mix the vinegar, mustard, paprika, red pepper, salt, black pepper and water together. Set aside.
Heat the oil and butter in a large skillet, add the onion, garlic and bell pepper, then saute until the onion is vaguely soft. Add the kielbasa and saute for about 3 minutes. Add the cabbage and continue to saute until it starts to wilt. Stir in the vinegar mixture, cover and steam for about 15 minutes. Boom.

Given your weather I’d suggest more than a pinch of the red pepper to generate more heat :). We will cook this on Saturday, altho we will use “Donny Brasco” sausages homemade by our local traditional Italian market (sorry I didn’t know of it when you all were here!) instead of Kielbasa. I suspect it will be equally tasty – and we will sit and watch the palm fronds blow in the cool wind 🙂 Thanks for the recipe!!
