Maurice, a long time crony of M. Parret is a gentle giant, kindly, a soft spoken gentleman; a man of “les bon mots”, courtesy personified. In his spare time, during the seasons, he hunts and kills animals that are edible. One of his favorites is chevreuil or roe deer, about the size of goat and really cute. He is never quite still for photos 🙁
Maurice made a lovely terrine of chevreuil with herbs and pistachio for our Thursday lunch entree. He really is a good, interested cook! Especially when it comes down to things that he has personally slaughtered 😀
Le Parret steamed some broccoli with a hollandaise sauce to accompany the terrine. Really fabulous! He, of course, is a shameless poser 🙂
For the main course, Maurice prepared a French style pizza with anchovies, olives, peppers, tomatoes and onions. It was very, very good but, I thought, more of a savory tarte. No complaints!
As this was what Maurice and M. Parret called a light lunch, we didn’t have a salad course, but went straight to the cheese. The cheese included goat cheese with ash, a rich Camembert and a buttery Cantal.
For dessert, M. Parret made his “creme”, this time with raisins. Of course I demurred 😀
As it was already 4:00 p.m. and the day was pretty much shot, we ended the meal with some potent plum alcohol in our coffee.
Wine suggestions: Bailly Cremant, Macon Village, Bordeaux

loved this small, humble (!) French lunch, the inventive, delicious mix of foods. Inspires me to think out of the food “box”. Just the pate with brocoli/bearnaise sauce would be perfect. La Vie en Rose….perfect name for that cook book Madame Rose!!!
The pate and broccoli with baguette was more than enough! But, you either eat with Le Parret or you don’t 🙂

I love France – and, as far as I know.. I’m 100% French Canadian descent, although I’m sure there’s some Native Canadian blood mixed in there somewhere… I’m hoping to visit my artist friend Brigitte in Belgium soon – I miss Europe!
