Busy Saturday! A rush through the open market for eggs and veg, the hardware store and two supermarkets. By the time we got back at 1:00 p.m. Jade, having home-worked all morning, was starving to death. We all like tuna salad so I quickly made a batch and because she waited so long I made her a “Big MacTuna” with three slices of bread, a double layer of tuna, crisp lettuce and tomatoes. She ate this with a side of cranberry chutney. This just proves that what is referred to as “fast food” is not food at all but recycled garbage. Rave, rant, rave, rant. I think it’s going to take a while to get over Ramstein 😀
Big MacTuna
2 scallions, thinly sliced
1 celery branch, halved vertically and thinly sliced
2 hard boiled eggs, coarsely chopped
1 12 oz can solid white albacore tuna, drained and broken up with a fork
1/4 – 1/3 cup mayonnaise
1 tbsp Dijon mustard
Salt and pepper
3 pieces of sliced bread, toasted
Mixed salad greens
Mix the scallions, celery, eggs, tuna, mayonnaise, mustard, salt and pepper together. Spread a layer of the tuna on one piece of bread, top with some of the greens, put another slice of bread on top and spread with tuna, top with greens and then cover with the last slice of bread.
Oh, Merci beaucoup! That’s what I’m having for lunch today! I attended the centennaire celebration of Swann’s Way, Vol. 1 of A la Recherche de Temps Perdus last night. Divine dinner, champagne, lovely reunion with The Asheville Proustians, but as I ate moderately from habit & caution, this morning I am already starving a la Jade! Headed to kitchen now to assemble early lunch with tuna, baguette, & all your ingredients plus lemon & chives! Merci encore…….

I often wonder why people think they are saving themselves some time with processed foods and fast food. Most delicious meals from scratch are quick to make and are delicious like this one.
