I had a thick half side of fresh salmon in the freezer. What a nice surprise! I thought simple would be best with a light lemon glaze and a side of romano beans.
Lemon Glazed Salmon
Juice of 1 lemon
1 tsp lemon zest
1/4 cup of honey
1/4 cup of melted butter
4 salmon fillets, skin on
Salt and pepper
1 tbsp butter
1 tbsp olive oil
Mix together the lemon, zest, honey and butter together in a sauce pan, then stir and simmer until it thickens into a light glaze. Set aside and keep warm. If the sauce thickens too much, add a little water and reheat.
Season the salmon with salt and pepper, heat the butter and oil in a saute pan, then add the salmon, skin side down and cook, turning every 2 minutes for about 8 minutes.
Place the salmon on 4 plates and spoon over the lemon sauce.
Salmon is coming out of my freezer today…like the idea of the lemon glaze.
