Yesterday my husband brought some Cornish game hens home from the commissary. Oops! Couldn’t be bothered. I quartered a Cornish game hen, browned it and braised it with cabbage, because I had cabbage. It was surprisingly good for so little thought or effort. But I do need an attitude adjustment 🙂
Braised Cornish Game Hen with Cabbage
1 Cornish game hen, quartered
Salt and pepper
2 tbsp olive oil
1 small onion, diced
2 large garlic cloves, slivered
1 small cabbage, sliced thickly
3-4 sprigs thyme
1 bay leaf
2 cups chicken broth
Season the hen pieces with salt and pepper, then brown on both sides in the olive oil. Remove and set aside. Add the onion and garlic, then cook until aromatic. Add the cabbage and cook for about 3-4 minutes, seasoning with salt and pepper. Add the thyme and tuck in the bay leaf. Put the reserved hen pieces on top of the cabbage, then pour the chicken broth over all. Bring to a boil, put the top on, then simmer for 40-45 minutes.
Wine suggestion: Screw top Riesling in a Baccarat crystal glass

Hi Christian. Think of it as a little chicken with a vague gamey taste. My mother cooked these often and they are also delicious roasted or grilled.
You can’t go wrong with chicken and garlic 😉
