Lazy Memorial Day with full freezers. Easy.
Who doesn’t have the necessary? Garlic, peppers and onions. Okay, fresh oregano was a bonus 😉 But not absolutely necessary.
However, I would have the tomato pesto.
Grilled Italian Sausage and Peppers with Tomato Pesto
1 large onion, sliced
3 tbsp olive oil
1 yellow and 1 red pepper, sliced into strips
4-5 cloves fresh garlic
Fresh oregano, chopped
6 Italian sausages
6 buns, grilled

Soften the onion in the olive oil, then add the peppers and saute until crisp tender. Add the garlic and continue to saute for about 2 minutes. Sprinkle with the oregano, set aside and keep warm.
Grill the sausages until cooked and browned on a medium high grill. Serve in the buns with the peppers on top and a dollop or two of tomato pesto.
I’ll be cooking some spicy Napoli sausages myself tonight 😉
