The refrigerator is almost bare of vegetables. All I’ve got left is beets and spinach. It seems such a hardship not being near a Sens style farmers’ market 🙁 My full bunch of celery served the cause today in a Martha Stewart inspired, tasty Chinese celery salad.
And the carrots, bell pepper and scallions allowed me to make cold soba noodle salad with a rich, peanut butter dressing.
Char Sui Quail with Two Salads
4 quail, spatchcocked
Char sui marinade
Put the quail in a zip lock with the marinade and marinate for at least 2 hours. Pan fry in a lightly oiled, nonstick pan for about 6-8 minutes per side.
Chinese Celery Salad
1 bunch celery
1 tbsp rice vinegar
1 tsp sesame oil
4 tbsp soy sauce
2 dashes chili oil
1/2 tsp sugar
2 tbsp parsley, chopped
Cut the top and bottom off the celery, cut in half and blanch for 2 minutes. Cut into bite sized pieces. Whisk the remaining ingredients together, pour over the celery, then refrigerate until ready to use.
Soba Noodle Salad
4 bundles of dried soba noodles, cooked, drained, fanatically washed and rinsed
1 carrot, grated
3 scallions, chopped
2 tbsp cilantro, chopped
1/2 bell pepper, thinly sliced
1/3 cup peanut butter
1/4 cup soy sauce
2 tbsp rice vinegar
3 tbsp sesame oil
1/4 tsp black pepper
1/2 tsp five spice powder
2 tbsp mirin
1 tbsp sugar
Sprinkling of crushed red pepper
Toss the vegetables together with the noodles. In a blender, blend all remaining ingredients, then pour over the noodles and vegetables.
Oh yum, yum – the noodles in particular! Good frugal feasts here again, Rosemary! Funnily enough, I’ve been eating duck! 😀 – I did a noodle dish yesterday and some spring rolls – soon to feature on the blog :D.
