Cheddar Cheese Eggs – Place some butter sauteed spinach in the bottom of a ramekin, then cover with 1/2 cup tomato sauce. Break two eggs into the sauce, poke the yolks once with a toothpick, then sprinkle on some grated cheddar cheese. Bake in a 400 F oven for 12-15 minutes.
Duck Legs with Girolle Mushrooms – Separate 2 duck legs into drumsticks and thighs, then salt and pepper. Brown the duck in 2 tbsp duck fat, remove from the pan and add 1 sliced onion and 2 diced carrots, then cook for 5 minutes. Put the duck back in the pan, pour in 1/2 bottle of red wine and simmer for 3 minutes. Add 1 cup of chicken broth, bring to a boil and simmer for 45 minutes.
Saute 1/2 lb girolle mushrooms in 2 tbsp butter for 3-4 minutes. Set aside.
Remove the duck pieces from the pan, add 2 tbsp creme fraiche and simmer for about 5 minutes. Put the duck and the mushrooms back in the pan and continue to simmer for another 5 minutes.

Thank you Frugal.
I will need to make those baked eggs. Did you use fresh or frozen spinach?
Fresh. À quick saute.
Yum. I am making this dish for b-fast tomorrow.
Excellent. Two dishes for the price of one blog look.
Thank you Conor.
Nice stuff. Glad you avoided the title of “Jaded Palate” 🙂
I’m just not that clever, Roger 🙂
Love the eggs! Can’t wait to try them!
I love the way you cook with Jade… delicious! I think I shall make those eggs this morning. 🙂
I like cooking with Jade, fresh, easy, and, well, there is cheese and duck!! Perfect!! 🙂
I’ve never tried baked eggs! They look delicious!
Thank you Erinn. I think baked eggs were popular in the 50s and then went out of fashion.
