This morning at 6 o’clock my husband took off to the States for a week and Jade went back to school at 5 this afternoon. Me and the kitties, home alone. Still, I made a nice lunch for Jade of lemon salmon and sesame stir fried greens.
Lemon Salmon and Stir Fried Greens
4 salmon fillets, skin on
1/4 cup butter, melted
1/4 cup honey
Juice of 1 lemon
1 tbsp sesame oil
1 tbsp butter
1/2 Napa cabbage, sliced
2 cups baby spinach
Black sesame seeds
Marinate the salmon in the butter, honey and lemon for 2-4 hours.
Melt the butter in the sesame oil and stir fry the cabbage and spinach, then sprinkle with the sesame seeds.
Sear the salmon and serve with the vegetables.
Wine suggestion: Cremant de Bourgogne
