I was sooo lazy today. It’s hot, but there were those packages and packages of ground lamb in the freezer to be gotten through.
The sweet potato slices I made were not as crispy as I would have liked but they were good, especially with the sweet chili mayonnaise. Great for quaffing the odd glass of wine or beer.
Why did I buy so much ground lamb?!
Lamb Burgers Tzatziki and Fried Sweet Potato
1 lb ground lamb
1 tbsp mint, chopped
Salt and pepper
4 Hamburger rolls, toasted
Tomato slices
Roquette
Cheese slices

1 large sweet potato, cut into rounds
Cornstarch
Peanut oil
Salt
Piment d’Espelette or hot paprika
Mix the lamb, mint, salt and pepper together, then form into 4 patties. Set aside.
Dust the sweet potato in cornstarch, then fry in the peanut oil until crisp. Sprinkle with salt and the piment or paprika. Set aside, keeping warm.
Grill the lamb patties on a stove top grill or on the barbecue, then layer them on the rolls with tomato, roquette, cheese and tzatziki.
Sounds like it’s got all the good flavours to me 😉

From the sound of the freezer contents you’ve certainly accounted for the silence of more than a few lambs. They look good between buns, maybe not as picturesque as in a field, but certainly good:)

Lamb burger sounds great. I usually make something similar to tzatziki with labneh thinned with a spoonfull or two of sour cream and seasoned with some chives, shallots and Spanish pimentón.

That is absolutely delicious! I am a lamb lover and also a burger lover so this one is a killer! I think fried sweet potatoes are a excellent idea too! Definitely a great post Rosemary!
