Lemon Chicken with Herbs

I found this marvelous recipe in this month’s French Saveur magazine.  Lots of good things inside this issue that I would like to cook.  I did object to a few things in the recipe involving ingredients (Hello!  Garlic, people!) and the odd method but otherwise the recipe’s simplicity and freshness was incredible.

Lemon Chicken Cassoulet

6 chicken, thighs

Salt and pepper


2 tbsp olive oil

1 large onion, thinly sliced

3 cloves garlic, slivered

1 large chicken Maggi cube

3 cups water

1 jar sundried tomatoes, about 200 grams, drained

1/2 cup black olives, pitted

1 lemon, thinly sliced

1/2 half bunch each, parsley and coriander leaves

Season the chicken with salt and pepper, dust with flour and then brown in the olive oil.  Remove and set aside.

Add the onion and garlic to the pan and cook until the onion is soft.  Crumble the Maggi cube on top, toss in the chicken and stir for about 1 minute.  Add the water, bring to a boil, then add the tomatoes, olives, lemon and herbs.  Bring to a boil, cover, then simmer for about 45 minutes.

Serve with good country bread.

    It does sound excellent – being a garlic person I’d be inclined to add more than 3 cloves 😉

  10. MMMM I love a good chicken recipe. I like that it uses chicken thighs too. Looking forward to trying this one. And I agree with Greg, the crispy skin is the best part!
