Grazing: Skagen and Salade Rouge

As it warms up and the fruits and vegetables come to the market in there Sunday Go To Meeting clothes, my thoughts turn to lighter dining fare.  Good ole Jamie’s March/April issue has a number of recipes from Sweden, including Skagen, a Swedish shrimp cocktail on fried bread.  This is the first time I’ve had fried bread and it was good!

Radishes and raspberries are in the market, so I decided to go for a crunchy, unusual, but interesting French salad that included oranges, radishes, shallots, raspberries and a very fine orange vinaigrette.  The real name for this salad is Salade Rose but it looks red to me.  Especially after I added the raspberries 🙂


1 lb cooked large shrimp

1/2 red onion, chopped fine

2 tbsp dill, finely chopped

3 tbsp olive oil

Juice of 1/2 lemon with grated zest

4 tbsp creme fraiche

Slices of country bread


Red fish roe

Mix the onion, dill, olive oil, juice, zest and creme fraiche together in a large bowl.  Stir in the shrimp.  Fry slices of the bread in the butter and then mound on shrimp.  Top with the fish roe.

Wine suggestion:  Cremant Chardonnay

    1 tbsp red wine vinegar
    3 tbsp olive oil
    Salt an peppr
