As it warms up and the fruits and vegetables come to the market in there Sunday Go To Meeting clothes, my thoughts turn to lighter dining fare. Good ole Jamie’s March/April issue has a number of recipes from Sweden, including Skagen, a Swedish shrimp cocktail on fried bread. This is the first time I’ve had fried bread and it was good!
Radishes and raspberries are in the market, so I decided to go for a crunchy, unusual, but interesting French salad that included oranges, radishes, shallots, raspberries and a very fine orange vinaigrette. The real name for this salad is Salade Rose but it looks red to me. Especially after I added the raspberries 🙂
Skagen
1 lb cooked large shrimp
1/2 red onion, chopped fine
2 tbsp dill, finely chopped
3 tbsp olive oil
Juice of 1/2 lemon with grated zest
4 tbsp creme fraiche
Slices of country bread
Butter
Red fish roe
Mix the onion, dill, olive oil, juice, zest and creme fraiche together in a large bowl. Stir in the shrimp. Fry slices of the bread in the butter and then mound on shrimp. Top with the fish roe.
Wine suggestion: Cremant Chardonnay
It looks as though I’ve missed some great posts from you, Rosemary – I’ve not actually touched WordPress in 5 days! The skagen sounds wonderful, I think my other-half would like it very much. Your posts often bring new foods onto my radar – thanks! 😀
Hi Frugal. The skagen was perfect!
That looks a refreshingly light but tasty springtime meal. Those roes will make the dish sing.
Cheers

Gorgeous recipe and compilation as usual! I am going plate shopping this weekend, so I can have a little variety. Prolly not going to spend too much. Any suggestions?
Shop in supermarkets and second hand stores. The salad plate is from Leclerc supermarket(1 euro 59) and the skagen plate is from a second hand store(2 euros).
This looks wonderful! And the colors!
Thank you Villy.
That salad looks great!
That salad was good! We had seconds.
I love the fruit combo!
Thank you Greg.
How can you say “and a very fine orange vinaigrette” and not provide us with the recipe?
3 tbsp fresh orange juice
1 tbsp red wine vinegar
3 tbsp olive oil
Salt an peppr
pepper
white pepper
It looks fantastic! So spring-like! I want to eat this right now!
So am I to assume that M. Parret has finally got some berries in?
Yes, now he can eat French strawberries 🙂
None of that Spanish nonsense for him!
Beautiful photos and great recipe!
Looking tasty and tempting – the salad combination sounds blissful, and what’s not to like about fried bread 😉
