This recipe was inspired by my refrigerator and Jamie Oliver. Yes, I over bought mushrooms again. I can’t help it, they looked good. I’ve still got the bizarre comment problem and am waiting for a solution from wordpress support. Hello!?
Nice rosti Frugal http://frugalfeeding.wordpress.com/2012/02/29/potato-rosti-with-salad-and-lemon-vinaigrette/. Is this a criticism? 🙂
Easy and quick!
Linguini with Mushrooms, Parmesan and Serrano Ham
3 garlic cloves, chopped
2 dried red chillies, crushed
3 tbsp olive oil
1 1/2 lbs mixed mushrooms, sliced or torn
1/2 tsp salt
1/2 cup white wine
1 handful chopped parsley
1 handful grated Parmesan
6 pieces serrano ham, sliced into thin batons
1lb cooked linguini or as you like
Parmesan cheese flakes
Cook the garlic and chillies in the oil for about 30 seconds, add the salt and mushrooms then cook until brown. Add the white wine and boil until evaporated.
Toss the mushrooms, parsley, parmesan and the ham together with the pasta. Garnish with the parmesan flakes and more parsley.
Very good recipe and lovely light for the pictures – very neat post.
I love it when you say nice things about my pictures 🙂 Thank you Roger.
I love the way you effortless flow from using such a wonderful unusual ingredient as sweetbreads to a much more day to day dish.
Great photography as usual, you set such a high standard.
Cheers
Marcus
Thank you Marcus. You keep my spirits up 🙂
Very nice dish, well composed, and stunning photography. Great work!
Thank you cj. I liked your chipolte mayo also but couldn’t comment 🙁
Looks like a winner. Can’t go wrong with jamón serrano.
Thank you Jon. It was sort of a last minute thought but it was in the fridge, so 🙂
Great sounding pasta dish…but do you make any other kind. I think not.
Thank you Karen 🙂
No criticism :D. I’m glad you liked it – I miss your comments :(. I’m glad you cracked out my friend, linguine, I adore it. I also love serrano ham – delicious 🙂
Thanks Frugal. Hopefully, I’ll be up to speed soon. I can comment on some peoples’ blogs like Greg’s and Roger’s but not on others. Who knows what’s going on?
The pasta sounds great, and your photos just get better and better. Did you see yourself on The Kitchn? http://bit.ly/x04VCC
No I didn’t! Thanks for the heads up!
Lovely dish!
At the risk of sounding redundant, yum! Looks amazing.
Ridiculously delicious! I halved the ingredients as I was only cooking for two, but kept the garlic, chilli and salt amount the same as in original recipe. Quick, easy, looks beautiful and tastes amazing.
Thank you Karolina. I should make this again 🙂
Very good. I used red pepper in place of chllies.
