I’d forgotten about chicken korma until I visited one of my favorite sites Rasamalaysia http://rasamalaysia.com/chicken-korma/2/. This is a wonderful Indian recipe and I can’t believe that I didn’t remember it. So many good things to eat and so little time!
I pretty much followed the recipe, only adding a little more of some spices and working in quail eggs and my tajine.
Chicken Korma
1 tsp salt
2 tsp fresh garam masala
1/2 tsp tumeric
1 tsp coriander powder
1 tsp cumin powder
2 tbsp chili powder
1 1/2 cups plain Greek yoghurt
2/3 cups deep fried onions
10 chicken thighs
2 1/2 tbsp butter or ghee
1 1/2 tsp cumin seeds
1 cinnamon stick
2 cardamons
4 cloves
2 large bay leaves
6 black peppercorns
1 inch fresh ginger, skin on, chopped
2 large garlic cloves, chopped
20 quail eggs, hard boiled
Mix together the first 8 ingredients and pour over the chicken, stirring to coat. Allow to marinate for 2-3 hours.
In a large pot, cook the cumin seeds, cinnamon, cardamons, cloves, bay leaves, peppercorns, ginger and garlic in the butter until fragrant. Add the chicken with the marinade and cook on high for 10 minutes. Put the chicken and sauce in a tajine, cover and cook in a 375 degree F oven for 30 minutes with the top on. Remove the top and continue to cook for another 15 minutes. Stir in the quail eggs and serve with chapatis or tortillas or rice and mixed vegetables.
