White Chocolate Rice Pudding with Pear Compote

If we had leftover rice, my mom would often make rice pudding with it.   No raisins, but plenty of butter and vanilla.

I added a little chopped white chocolate and topped the rice pudding with whipped cream and a wine pear compote.  My stove care giver loved it!

White Chocolate Rice Pudding 

2 cups leftover rice

3 cups milk

1/2 cup sugar

2 tbsp butter

1 pinch of salt

1 tsp vanilla

2 egg yolks

3 tbsp whipping cream

4 ounces of white chocolate, chopped

1 tsp orange zest, grated

1/4 tsp ground cinnamon

3 pears, peeled, cored and cut into chunks

1/4 cup water

1/4 cup red wine

1/2 cup sugar

1 cinnamon stick

1/4 lemon, sliced

Whipped Cream

In a sauce pan, mix together the rice, milk, sugar, butter, salt and vanilla.  Bring to a boil and simmer for 40 minutes, stirring occasionally.  Whisk the yolks and cream together, then gradually whisk in some of the hot rice mixture.  Return this mixture to the pan and continue to cook, stirring and not boiling for about 2 minutes.

Remove the pot from the heat and stir in the chocolate, zest and cinnamon until the chocolate has melted.   Place in dessert glasses and chill in the refrigerator.

Put the pears, water, wine, sugar, cinnamon and lemon in a sauce pan and bring to a boil. Simmer until the pears are tender.  Chill in the refrigerator.

To serve, top the rice pudding with whipped cream and the pear compote.
