I used an old Fanny Farmer recipe for these mini cheesecakes that is very good. http://atomic-temporary-17826715.wpcomstaging.com/2011/05/15/miniature-strawberry-cheesecakes/ and made a simple cherry sauce for the topping.
We had wanted to make blueberry muffins for my husband’s homecoming but couldn’t find fresh blueberries. What we did find were gorgeous cherries from either Peru or Chile.
Cherry Sauce
1 lb Bing cherries, pitted
Juice of 1 lemon
3 tbsp sugar
1 tbsp cornstarch
Simmer the cherries, lemon juice and sugar for about 4-5 minutes. Add the cornstarch and continue to simmer until the sauce has thickened.
