Salmon with Grilled Red Pepper Sauce

I had one of my can’t be bothered days today and just made what was on hand in a really sloppy way.    Thank God salmon is always good no matter what you do with it, as long as you don’t overcook it.

The roasted pepper sauce turned out surprisingly tasty if not as smooth as I wanted.   I hope I can remember all of the ingredients.   I did use a jar of grilled peppers that are usually reserved for olive salad and some toasted pine nuts.

Grilled Red Pepper Sauce with Salmon

3 garlic cloves, chopped

1 small onion, chopped

2 tbsp olive oil

3 tbsp toasted pine nuts

1 jar grilled red pepper, pureed

Salt and pepper

4 salmon filets

1 tbsp butter

Cook the onion and garlic in the oil until soft.  Puree the onion mixture, including the cooking oil with the pine nuts.  Put the onion and pine nut mixture in a sauce pan with the pureed red peppers, salt and pepper, then cook for about 5 minutes. Keep warm.

Cook the salmon filets in the butter for about 6-8 minutes, turning 3 times.  Serve with the warm red pepper sauce.

Wine suggestion:   Yellowtail Pinot Grigio

  1. That’s how I felt yesterday. Your salmon is one up on my reheated tagine.

  2. The pepper sauce would be delicious with gilled meat or any other fish too. It reminds me of Romesco sauce, made with roasted peppers and ground almonds. This looks wonderful for a can’t-be-bothered day!

    Another option would be to pool the sauce on the centerplate, and place the salmon over that. Then, a few garnishes, and it wouldn’t look like a “can’t be bothered” day! 🙂
