Coquelet Nature

I needed to do a few things today in preparation for my luncheon tomorrow and got really stuck for time.  With an hour to get dinner on the table, I butterflied a little chicken (coquelet), salt and peppered it, brushed with butter and cooked it for 45 minutes in a 400 degree oven.  My daughter Jade called it Coquelet nature and pronounced it perfect.   Sometimes the simple things are best.

Those of you who suggested other uses for my red pepper sauce http://atomic-temporary-17826715.wpcomstaging.com/2011/10/12/salmon-with-grilled-red-pepper-sauce/, well voila!
