A simple and quick meal using the French cut of chops, echine de porc. I’m not really sure about the translation for echine de porc chops. They remind me of pork steaks but the translation refers to pork loin. So I guess I would recommend that for this recipe you use either pork loin chops or pork steak.
Spice Rubbed Pork Steak
2 lean pork steaks or loin chops
Emeril’s essence
1 tbsp butter
Rub the pork steaks with Emeril’s essence or your favorite creole rub. Fry in the butter until cooked, no longer pink inside. Serve with a fresh salad and garlic bread.
