Balsamic Lamb and Twice Cooked Sweet Potatoes

Since we ate those sweet potatoes with the honey mustard chicken, I have been trying to find another excuse to have sweet potatoes. Found it!

The star of this plate is the lamb with shallots and a balsamic vinegar reduction.   I think that over much has been made of reductions, but it just involves boiling the liquid down until thick and is very much worth it.

Balsamic Lamb and Sweet Potatoes

2 sweet potatoes, baked and sliced into rounds

4 lamb noisettes

1 tbsp olive oil

2 shallots, thinly sliced

1/3 cup balsamic vinegar

3/4 cup chicken broth

1 tbsp butter

Saute the sweet potato rounds in a little olive oil.   Set aside and keep warm.

Saute the lamb in the 1 tablespoon of olive oil,  2 minutes per side.   Set aside and keep warm.

Add the shallots to the pan and brown.   Add the vinegar and broth, reducing the liquid by half and stir in the butter.   Serve with the lamb and sweet potatoes.

Wine suggestion:   Champagne millesime

  7. Very nice indeed. I think the best thing about your photography is the variety – I do find myself learning quite a bit from just looking at your photos as you go along. I think I do fairly well with my humble camera, but sorely wish I had a DSLR – me and the girlfriend are going to joint buy one next year I think, since we both want one but don’t really need two. However, it’s autumn, Sens, one doesn’t need an excuse to eat sweet potatoes :D. This dish looks really yum too.

    • Hi Frugal. I took all of my photos with a point and shoot until late July. One of them was accepted by foodporndaily and others were accepted by foodgawker and tastespotting. It’s harder to take a good food photo with a point and shoot but not impossible and I think you do just fine!

And, in a reply to Frugal- Save your lunch money to get a DSLR, I was using a point and shoot until about a year ago. In my opinion, it is night and day in regard to picture quality. I really enjoy using my DSLR. I just wish I knew how to use it like Rosemary does!
