We found some small packages of veal slices in the 2 for 1 bin in Carrefour and of course I couldn’t resist. They looked pretty good!
I thought whatever I did with the veal, I wanted roasted peppers with it and because it’s so easy to get them from Picard, it was a done deal.
This was rapidly turning into an Italian-like meal, as I decided on tagliatelle with pesto.
On a roll, I ran to the store picked up some prosciutto and mozzarella for the veal.
Sometimes I feel a little ridiculous taking all these pictures, going “teacher, teacher, what about this one?” It’s Roger’s fault.
Veal with Prosciutto and Mozzarella
4 thin slices of veal
1 tbsp butter
8 whole basil leaves
4 slices of prosciutto
1 small mozzarella, cut into 4 slices
Quickly brown the veal slices in the butter then lay them in a baking dish. Put 2 basil leaves on each veal slice, add 1 slice of prosciutto and 1 slice of mozzarella. Bake in a 400 degree oven for 5-8 minutes. Serve with pesto tagliatelle and roasted peppers.
Very, very easy. Very, very satisfying. Now grab yourself a large glass of the red and enjoy!

One of my husband favorite veal dishes is Veal Saltimbocca. Substituting basil and adding cheese sounds good.
