Potted shrimp. I bought these cute little pots the other day and have been thinking about what I wanted to do with them. Obviously, it had to involve some sort of fish.
I had some leftover garlic and chilli butters from the oysters and clams http://atomic-temporary-17826715.wpcomstaging.com/2011/08/15/step-away-from-the-fish-market/, so decided to do a take on potted shrimp. I found some very pretty shrimp in the market today!
Instead of the usual mace flavored butter, I made two different batches of the shrimp; one with a garlic parsley flavor and the other with a chilli flavor by just adding a tablespoon of the flavored butter to each batch. This worked really well and tasted fantastic!
1 lb shrimp, cleaned
3/4 cup butter
1 tbsp chilli butter
1 tbsp garlic parsley butter
Chilli potted shrimp: Melt 1/4 cup of butter with 1 tbsp chilli butter. Add the shrimp and cook, stirring until the shrimp are cooked, about 3 minutes. Do not boil. Put in ceramic pots and refrigerate.
Garlic parsley potted shrimp: Melt 1/4 cup of butter with 1 tbsp garlic parsley butter. Add the shrimp and cook, stirring until the shrimp are cooked, about 3 minutes. Do not boil. Put in ceramic pots and refrigerate.
When the pots are cool and set, melt the remaining 1/4 cup of butter and pour a thin layer on top. Refrigerate until ready to serve.
Wine suggestion: Muscadet
