Salmon is wonderful, salmon on the grill is fantastic and salmon with roasted asparagus is gourmet. This is an easy, elegant, palate pleasing plate. The salmon is marinated and basted in lemon, honey and butter. The same mixture, heated, serves as the accompanying sauce. The asparagus are simply roasted with salt, pepper and olive oil.
The tart-sweet taste of the sauce compliments both the salmon and asparagus. Do have wine.
Lemon Honey Salmon
1 lb of salmon fillet with skin
Juice of 1 lemon
1/4 cup of honey
1/4 cup of melted butter
1lb asparagus
Olive oil
Salt and pepper
Mix the lemon juice, honey and butter together and pour over the salmon fillet. Marinate for an hour. In the meantime, salt and pepper the asparagus, drizzle with olive oil and roast in a 400 degree oven for 25 minutes.
Grill the salmon fillet on a hot grill for about 3 minutes per side. Serve with the asparagus.
Wine suggestion: Cremant de Bourgogne

A nice, simple recipe that would be terrific with Alaskan salmon. Yes, I’m a bit biased … 🙂 Another wine pairing suggestion is Pinot Noir, which goes quite well with salmon, or since you are in France perhaps a light Burgundy.
