Oops, I thought I had panko but it must be in the garage. I did have regular bread crumbs and they worked just fine.
Yes, I am going through a Japanese/Chinese/Asian phase. A craving really and my favorite thing to cook right now. Probably caused by the lack of ready ingredients for this cuisine while I was in Africa/Bangladesh/Haiti. Ditto for the variety of fish.
Dos de cabillaud is my new fish variety vocabulary. It means cod, and is more attractive then it’s name.
Fried Cod with Ginger Sauce
1lb of cod fillets, cut into bite sized pieces
1 cup of flour
1 tsp salt
1 tsp garlic powder
3 eggs, beaten
1 cup of bread crumbs or panko
Vegetable oil
Blend the flour, salt and garlic powder. Dip the cod pieces in the flour, then the egg and finally the bread crumbs. Fry until golden brown.
Ginger Sauce
1 inch of fresh ginger, sliced
1/2 onion chopped
1/2 cup of tamari soy sauce
1/4 cup of Japanese rice vinegar
3 tablespoons of mirin
Blend all ingredients in a food processor or blender for 1 – 2 minutes.
